In the Kitchen with Zooba: The Best Authentic Tahini Sauce Recipe

We know you love our tahini sauce. We get asked at least 100 times a day for “a little extra tahini sauce” on the side. Now with the pandemic we get asked maybe only 50 times. So we thought we’d give the people what they want and let you have a peek into our kitchen. Here’s our famous authentic tahina recipe so you can enjoy it wherever you’re quarantining.

INGREDIENTS

For one serving you’re going to need:

•          4 medium-to-large cloves garlic, pressed or minced

•          ¼ cup lemon juice

•          ½ cup tahini

•          ½ teaspoon fine sea salt

•          Pinch of ground cumin

•          6 tablespoons ice water

INSTRUCTIONS

1.     In a bowl, combine the garlic and lemon juice. Let it sit for 10 minutes to let the flavors mix.

2.     Pour the mixture through a mesh strainer into another bowl and discard the solids.

3.     Add the tahini, salt and cumin and whisk until thoroughly blended.

4.     Add water 2 tablespoons at a time, whisking until smooth. Keep adding water until you’ve added 6 tablespoons total.

5.     Optional: Add more water if you prefer a thinner consistency and more lemon if you want more of a tang.

6.     Your tahina is ready to serve!

You can serve your tahini with roasted vegetables, pita, or our favorite way: drizzled over our daily in-house made taameya. It’s a fava bean and herb concoction that’s made fresh in-house and fried up daily.
